Ingredients
- 1.5 lbs (700g) baby potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon bits
- 1/2 cup sour cream
- 2 tablespoons fresh chives, chopped
Instructions
Boil the Potatoes:
- Wash the potatoes thoroughly and place them in a large pot.
- Cover with water, add a pinch of salt, and bring to a boil.
- Cook the potatoes until fork-tender, about 15 minutes.
- Drain and let them cool slightly.
Preheat the Oven:
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper or a silicone baking mat.
Smash the Potatoes:
- Arrange the boiled potatoes on the prepared baking sheet, leaving space between each.
- Using the back of a fork, a potato masher, or the bottom of a glass, gently smash each potato to about ½-inch thickness.
- Drizzle olive oil over the potatoes and sprinkle with salt, pepper, and garlic powder.
Bake the Potatoes:
- Bake in the preheated oven for 20 minutes, or until the edges are golden and crispy.
Add Toppings:
- Remove the tray from the oven and sprinkle the shredded cheddar cheese and bacon bits over each potato.
- Return the tray to the oven and bake for another 5 minutes, just until the cheese melts.
Garnish and Serve:
- Remove from the oven and top each potato with a dollop of sour cream.
- Sprinkle freshly chopped chives over the top.
- Serve immediately and enjoy the crispy, cheesy goodness!
Notes
- Use baby potatoes for the best texture—they’re small, creamy, and perfect for smashing.
- For extra crunch, flip the potatoes halfway through baking.
- Want to customize? Swap bacon for veggies, or try a different cheese like mozzarella or gouda.
