- 2 cups shredded zucchini (lightly squeezed)
- 3 large eggs
- ½ cup vegetable oil or melted butter
- ¼ cup milk (dairy or non-dairy)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon (optional)
- Optional mix-ins: mini chocolate chips, chopped walnuts, shredded coconut
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
- In a large bowl, whisk together eggs, oil, milk, and vanilla.
- Stir in shredded zucchini.
- Add dry cake mix and cinnamon. Mix gently until just combined.
- Fold in optional add-ins like chocolate chips or nuts.
- Pour into prepared pan and smooth the top.
- Let batter rest 10 minutes before baking (Grandma Mary’s tip!).
- Bake for 45–55 minutes, or until a toothpick comes out clean.
- Cool in pan 10–15 minutes, then transfer to a wire rack.
Notes
To make muffins, bake in a muffin tin for 18–22 minutes. Store at room temp for 3 days, refrigerate up to 6, or freeze up to 3 months. Add pineapple or carrot for a tropical or carrot cake twist.
