Ingredients
🍖 For the Meatloaf:
- 2 lbs ground beef (80/20 recommended)
- 1 cup breadcrumbs (or almond flour for keto)
- ½ cup milk
- 1 large egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- ½ tsp paprika
- 1 cup shredded Swiss cheese
🍄 For the Mushroom Filling:
- 1 tbsp butter
- 8 oz mushrooms, finely chopped
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tbsp Worcestershire sauce
🥄 For the Topping:
- ½ cup ketchup
- 1 tbsp Dijon mustard
- 1 tbsp brown sugar

Instructions
1️⃣ Prepare the Mushroom Filling:
- Melt butter in a pan over medium heat.
- Add chopped mushrooms, salt, pepper, garlic powder, and onion powder.
- Sauté until mushrooms are soft and slightly browned, about 5 minutes.
- Stir in Worcestershire sauce and cook for another minute.
- Remove from heat and let cool.
2️⃣ Make the Meatloaf Mixture:
- In a large bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, garlic, salt, pepper, Worcestershire sauce, thyme, and paprika.
- Mix until well combined, but do not overmix.
3️⃣ Assemble the Meatloaf:
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper or grease a loaf pan.
- Press half of the meatloaf mixture into the bottom of the pan.
- Spread the sautéed mushrooms evenly over the meat.
- Sprinkle shredded Swiss cheese on top of the mushrooms.
- Cover with the remaining meat mixture, sealing the edges.
4️⃣ Add the Topping:
- In a small bowl, mix ketchup, Dijon mustard, and brown sugar.
- Spread the glaze evenly over the meatloaf.
5️⃣ Bake the Meatloaf:
- Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing.
