Description

This Mushroom Swiss Cheese Meatloaf is a rich, juicy, and flavorful dinner, loaded with sautéed mushrooms and melted Swiss cheese. A perfect comfort food for the whole family!

🍖 For the Meatloaf:

  • 2 lbs ground beef (80/20 recommended)
  • 1 cup breadcrumbs (or almond flour for keto)
  • ½ cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • ½ tsp paprika
  • 1 cup shredded Swiss cheese

🍄 For the Mushroom Filling:

  • 1 tbsp butter
  • 8 oz mushrooms, finely chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp Worcestershire sauce

🥄 For the Topping:

  • ½ cup ketchup
  • 1 tbsp Dijon mustard
  • 1 tbsp brown sugar

Instructions

1️⃣ Prepare the Mushroom Filling:

  • Melt butter in a pan over medium heat.
  • Add chopped mushrooms, salt, pepper, garlic powder, and onion powder.
  • Sauté until mushrooms are soft and slightly browned, about 5 minutes.
  • Stir in Worcestershire sauce and cook for another minute.
  • Remove from heat and let cool.

2️⃣ Make the Meatloaf Mixture:

  • In a large bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, garlic, salt, pepper, Worcestershire sauce, thyme, and paprika.
  • Mix until well combined, but do not overmix.

3️⃣ Assemble the Meatloaf:

  • Preheat oven to 375°F (190°C).
  • Line a baking sheet with parchment paper or grease a loaf pan.
  • Press half of the meatloaf mixture into the bottom of the pan.
  • Spread the sautéed mushrooms evenly over the meat.
  • Sprinkle shredded Swiss cheese on top of the mushrooms.
  • Cover with the remaining meat mixture, sealing the edges.

4️⃣ Add the Topping:

  • In a small bowl, mix ketchup, Dijon mustard, and brown sugar.
  • Spread the glaze evenly over the meatloaf.

5️⃣ Bake the Meatloaf:

  • Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for 10 minutes before slicing.
