- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 tbsp cornstarch
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp vegetable oil (for pan or air fryer)
- ½ cup sweet chili sauce
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp rice vinegar
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tsp sesame oil
- Optional: 1 tsp sriracha (for heat)
- Chopped green onions
- Sesame seeds
- Lime wedges
Instructions
- In a large bowl, coat chicken thighs in cornstarch, salt, and pepper.
- Pan-fry or air fry until golden brown and cooked through (skillet: ~6–8 minutes per side; air fryer: 400°F for 10–12 minutes).
- In a skillet, sauté garlic and ginger. Stir in sweet chili sauce, soy sauce, vinegar, honey, and sesame oil. Simmer for 2–3 minutes until glossy.
- Add cooked chicken and toss to coat evenly in sauce.
- Garnish with green onions, sesame seeds, and a squeeze of lime. Serve hot over rice or noodles.
Notes
For crispier chicken, don’t overcrowd the pan or air fryer basket.
Adjust sriracha based on spice preference.
Best served immediately after tossing in the sauce for maximum texture.
