Ingredients
- 1 cup jasmine or basmati white rice
- 2 tbsp butter (or ghee)
- 2 medium yellow or sweet onions, thinly sliced
- 2 garlic cloves, minced
- 2 cups vegetable or chicken broth
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
- Optional: bay leaf, thyme, or splash of white wine
Instructions
- Melt butter in a large pot. Add sliced onions and salt. Cook over medium-low for 15–20 minutes, stirring often, until caramelized.
- Stir in garlic and cook for 1–2 minutes until fragrant.
- Add rice and stir to coat. Toast gently for 1 minute.
- Pour in broth. Bring to a simmer, cover, and reduce heat. Cook for 15 minutes.
- Turn off heat. Let sit covered for 5 minutes. Fluff and serve.
- Rice Cooker Option: After caramelizing onions and garlic, add all ingredients to rice cooker. Stir and cook on white rice setting.
Notes
Use olive oil instead of butter for a dairy-free version.
Add frozen peas or spinach for extra vegetables.
