Description

  • 2 large boneless, skinless chicken breasts (or 4 chicken thighs)

  • ½ tsp paprika
  • ½ tsp salt

🥗 For the Bowl Base:

  • 2 cups cooked rice (white, brown, or cauliflower rice for low-carb)
  • 1 cup chopped cucumbers
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • ½ cup kalamata olives
  • ½ cup crumbled feta cheese
  • 1 tbsp fresh parsley, chopped

🥣 For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • ½ cucumber, grated & drained
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • ½ tsp dried dill
  • ½ tsp salt

Instructions

1️⃣ Marinate the Chicken:

  • In a bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and black pepper.
  • Add the chicken and coat evenly. Let it marinate for at least 30 minutes (or up to overnight for deeper flavor).

2️⃣ Cook the Chicken:

  • Heat a grill pan or skillet over medium-high heat.
  • Cook the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

3️⃣ Prepare the Tzatziki Sauce:
