  • 1.5 lbs ground beef
  • 1 cup bread crumbs
  • 1 large egg
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • 2 large yellow onions, sliced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Meatballs: In a large bowl, combine ground beef, bread crumbs, egg, Parmesan cheese, garlic powder, salt, and pepper. Mix well and shape into 1.5-inch meatballs.
  • Sear the Meatballs: Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown on all sides. Set aside.
  • Caramelize the Onions: In the same skillet, melt butter and sauté sliced onions over medium heat until golden and caramelized, about 15-20 minutes.
  • Assemble in Crock Pot: Place the caramelized onions in the bottom of the Crock Pot. Layer the seared meatballs on top.
  • Add the Broth Mixture: In a bowl, whisk together beef broth, Worcestershire sauce, and a pinch of salt. Pour the mixture over the meatballs and onions.
  • Cook Low and Slow: Cover the Crock Pot and cook on low for 6-8 hours, or on high for 3-4 hours.
  • Add Cheese: In the last 30 minutes of cooking, sprinkle shredded mozzarella cheese on top. Cover and let it melt.
  • Serve and Garnish: Serve the meatballs warm, garnished with fresh parsley. Pair with mashed potatoes, rice, or pasta for a complete meal.

Notes

  • Use 80/20 ground beef for juicier meatballs.
  • To thicken the sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir it in during the last 30 minutes.
