Ingredients

Scale

For the Doughnuts:

  • 2 medium potatoes, boiled and mashed
  • 1 cup cooked and shredded chicken
  • ½ cup shredded cheese (cheddar or mozzarella)
  • 2 tbsp cornflour
  • 2 tbsp all-purpose flour
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 tsp salt (adjust to taste)
  • 1 egg

For Coating:

  • 1 egg, beaten
  • ½ cup all-purpose flour
  • 1 cup breadcrumbs

For Frying:

  • Vegetable oil, for deep frying

Instructions

  • Make the Dough:
In a bowl, mix mashed potatoes, chicken, cheese, cornflour, flour, garlic powder, onion powder, black pepper, paprika, salt, and one egg. Mix until a soft dough forms.

  • Shape the Doughnuts:
Roll small portions into balls, flatten slightly, and use your finger or a small cutter to make a hole in the center—shaping them like classic doughnuts.

  • Coat:
Dredge each doughnut in flour, dip in the beaten egg, and coat with breadcrumbs.

  • Fry:
Heat oil in a pan over medium heat. Fry the doughnuts in batches until golden and crispy. Drain on paper towels.

Notes

  • Use a potato ricer like the one recommended by Serious Eats for the smoothest mash.
  • You can bake or air fry for a healthier version.
  • Freeze before frying for easy meal prep.
