Instructions

Step 1: Prepare the Crust

  2. Combine graham cracker crumbs, melted butter, and sugar in a bowl.
  3. Press the mixture firmly into the bottom of a springform pan. Chill while preparing the filling.

Step 2: Make the Cheesecake Filling

  1. Beat cream cheese in a large bowl until smooth.
  2. Gradually add sugar, mixing until fully incorporated.
  3. Add eggs one at a time, beating after each addition.
  4. Mix in heavy cream and vanilla extract until smooth.

  1. Sprinkle an even layer of brown sugar over the chilled cheesecake.
  2. Use a blowtorch to caramelize the sugar until golden and crunchy. (Alternatively, use your oven’s broiler for 2–3 minutes, watching closely.)
