Instructions
Step 1: Prepare the Crust
- Preheat the oven to 325°F (160°C).
- Combine graham cracker crumbs, melted butter, and sugar in a bowl.
- Press the mixture firmly into the bottom of a springform pan. Chill while preparing the filling.
Step 2: Make the Cheesecake Filling
- Beat cream cheese in a large bowl until smooth.
- Gradually add sugar, mixing until fully incorporated.
- Add eggs one at a time, beating after each addition.
- Mix in heavy cream and vanilla extract until smooth.
Step 3: Bake the Cheesecake
- Pour the filling over the chilled crust.
- Place the springform pan in a larger pan filled with 1 inch of water.
- Bake for 55–60 minutes, or until the edges are set and the center slightly jiggles.
- Turn off the oven and leave the cheesecake inside to cool for 1 hour.
- Transfer to the fridge and chill for at least 4 hours or overnight.
Step 4: Add the Crème Brûlée Topping
- Sprinkle an even layer of brown sugar over the chilled cheesecake.
- Use a blowtorch to caramelize the sugar until golden and crunchy. (Alternatively, use your oven’s broiler for 2–3 minutes, watching closely.)
