Description

Soft, moist, and delicious, this Cottage Cheese Bread is a protein-packed twist on traditional loaves. Perfect for breakfast, as a snack, or paired with your favorite savory dishes, this recipe brings wholesome flavor with every bite.

1 cup cottage cheese (full-fat preferred, or low-fat)

3 cups all-purpose flour (can substitute half whole wheat flour)

2 large eggs

1 tablespoon baking powder

1 teaspoon salt

2 tablespoons sugar

2 tablespoons melted butter (or olive oil)

¼ cup milk (optional, to adjust dough consistency)

Optional Additions:

Chopped fresh herbs (rosemary, thyme, dill)

Grated cheddar, parmesan, or mozzarella

Sunflower seeds, chia seeds, or crushed walnutsRaisins, cranberries, or chopped dates


Instructions

Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.

In a large bowl, sift together the flour, baking powder, salt, and sugar.

In a separate bowl, whisk the cottage cheese, eggs, and melted butter. Blend the cottage cheese first if you prefer a smoother texture.

If the mixture is too thick, gradually add milk until the batter is pourable but not runny.

Create a well in the dry ingredients and pour in the wet mixture. Gently stir with a spatula until a soft, sticky dough forms. Do not overmix.

Fold in any optional additions (herbs, cheese, seeds, or dried fruit) if using.

Transfer the dough to the prepared loaf pan. Smooth the top and sprinkle with extra seeds or cheese if desired.

Bake for 40–50 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.

Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
