Description

A comforting and nutritious chicken broccoli rice casserole that combines lean protein, fresh vegetables, and hearty rice in a creamy, baked dish. Perfect for families and weeknight dinners.


Ingredients

  • 2 cups cooked chicken, cubed or shredded
  • 2 cups cooked rice (white or brown)
  • 2 cups broccoli florets, steamed
  • 1 can (10.5 oz) cream of mushroom or chicken soup
  • 1/2 cup milk or chicken broth
  • 1 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine cooked rice, chicken, broccoli, soup, milk or broth, spices, and half the cheese.
  3. Transfer mixture into the prepared baking dish and spread evenly.
  4. Top with remaining cheese and cover with foil.
  5. Bake for 25 minutes covered, then uncover and bake an additional 10–15 minutes until bubbly and golden.

Notes

You can use rotisserie chicken for convenience.
Substitute cream of mushroom with cream of celery or a homemade sauce.
Add breadcrumbs on top for a crispy finish.
