Description

A charming mini cake that packs big Southern flavor! This bento cake is soft, moist, and beautifully decorated perfect for intimate celebrations or personalized gifts.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, softened
  • 1/2 cup buttermilk
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Optional: food coloring, frosting, sprinkles for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 4-inch cake pans.
  2. In a bowl, cream the butter and sugar until light and fluffy.
  3. Add the egg and vanilla, then mix in the buttermilk.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Pour batter into pans and bake for 18–22 minutes, or until a toothpick comes out clean.
  7. Let cakes cool, then frost and decorate as desired.

Notes

You can double the recipe for a bigger batch. Store leftovers in an airtight container for up to 3 days. Use gel food coloring for vibrant designs without altering the batter texture.
